BACON SALAD - Sue Girtler
SALAD: SAUCE:
1/2 Cup Onion -sliced 1/2 C. sugar
1/3 Cup Raisins 2 T. apple cider vinegar
1/2 Cup unsalted peanuts 1 C. mayonnaise
2 Bunches Broccoli, cut 1/2 T. Curry (optional)
1/2 lb. bacon, cooked and crumbled
Toss salad ingredients together. Mix all ingredients for sauce and pour over salad mixture.
PERFECTLY EASY DINNER ROLLS - Shirley Adams
1 cup warm water (105 TO 115degrees F)
2 Pkgs active dry yeast
1/2 cup (1 stick) butter
1/2 cup sugar
3 eggs
1 tsp. salt
4 to 4 1/2 cups all-purpose flour
(Makes 2 dozen rolls)
Combine the warm water & yeast in large bowl. Let stand till yeast is foamy(5 Min.)
Stir in butter, sugar, eggs, salt. Beat in flour, 1 cup at a time till dough is too stiff to mix (some flour may not be needed) Cover 7 refrigerate 2 hours or up to 4 days
Grease a 13 x 9 inch baking pan. Turn the chilled dough out onto a lightly floured board. Divide dough into 24 equal pieces. Roll each piece into a smooth roung ball; place balls in even rows inthe prepared pan. Cover and let dough balls rise until doubled (about 1 hour)
Preheat oven to 375. Bke until rolls are golden brown, 15 - 20 min. Brush warm rolls with melted butter if desired.Break rolls apart to serve.
CORN SOUFFLE CASSEROLE - Shirley Adams
1Can 14 3/4 oz cream corn 1 can 15 1/4 whole kernel corn
1 stick butter 1-8 oz. container sour cream
2 eggs, slightly beaten 1-8 oz. box corn mufin mix
Combine all ingredients except muffin mix.
Add muffin mix and stir to combine. Pour int 2 quart baking dish
Bake 350 degrees--40 to 60 min..till golden brown.
REFRIGERATED MASHED POTATOES- Shirley Adams
9 Lg. Potaotes, cooked & mashed
6 Oz. Cream Cheese
1 Cup Sour Cream
2 tsp. Onion salt
1/2tsp. Pepper
2 Tbsp. butter or marg.
Heat overn to 350. chile potaotes are hot, add the remaining ingredients. Place in a greased Casserole. Bake 30 to 40 min. Will keep in refrigerator for 2 weeks. When ready to eat, dot top with margarine pieces and reheat.
Potatoes Delight--Deb Munyan
2 lb. Bag hash browns
1 stick margarine
1 pint sour cream
1 can cream of celery soup
10 oz. grated cheddar
1 ¼ cup chopped onion
salt and pepper
Thaw hash browns on cookie sheet. Melt margarine in 13 x 9 pan. Mix all ingredients and put into pan. Save some cheese for top. Cover loosely with foil. Cook 375 degrees for 50 minutes. Remove foil and cook 15 minutes more. Sprinkle with remaining cheddar.
Polynesian Chicken Salad--Pam Ruff
4 cups diced chicken
1 cup diced celery
½ cup green olives, sliced
1 cup pineapple chunks, chopped in half
1 cup mandarin orange
½ green pepper, chopped
2 T. diced onion
½ jar Miracle Whip (or 2 cups)
2 T. mustard
Before serving, add 3 oz. Can of chow mein noodles.
Serves 6-8
