Desserts

In a large glass bowl, layer the following:

1 can pineapple chunks

2 oranges or 1 can mandarin oranges

1 ½ cups grapes, seedless

1 can pears, cut up

1 or 2 kiwi, sliced

In season: Add strawberries and/or cherries

Whip the following topping and either layer over the top or serve on the side:

8 oz. cream cheese

2 Tbsp. Lemon juice

1 tsp grated lemon

½ cup whipping cream

¼ cup powdered sugar

Sprinkle with slivered almonds and/or grated chocolate.


Wonderful Caramel Brownies--Deb Munyan

Take brownies and make them even better. We had these up at Lake Eska with John and Deb, and they are scrumptious. Diet tip: Chew them, but don’t swallow.

1 package light caramels

2/3 cup evaporated milk

¾ cup butter

1 box German chocolate cake mix

1 cup chopped nuts

1 package chocolate chips

Place caramels and 1/3 cup of the evaporated milk in saucepan over med-low heat. Mix remaining ingredients in bowl (1/3 evaporated milk, melted butter, cake mix and nuts). Spread ½ the cake mixture in 13 x 9 pan and bake 6 minutes. While cake is hot, sprinkle chocolate on top. Spread melted caramel over bits and crumble remaining cake mix over caramel. Bake 20 more minutes. Makes 4 doz.




Easy Banana Dessert Treat for Campfires - Joanne Miller

Slice a banana lengthwise in half and place on alumnium foil.

Sprinkle w/ miniature marshmellows and chocolate chips. seal foil and place in campfire coals or on grate for a few minutes until hot and melted. yummy!
